One of the favorite foods of the Betawi people. The flesh of the cempedak fruit that is fragrant is mixed with flour, eggs, and sugar and then fried in coconut oil. The Betawi people used to like making their own cooking oil. It was made by cooking ripe coconut milk over low heat until it produces oil. The Coconut milk is continuously stirred so that it does not break (the pulp is not clotted and separated from its juice). The cooked coconut milk that has produced oil has to be continually cooked until the pulp of the oil turns brown in color. This coconut milk pulp tastes sweet and savoury.
